No Bake Cookie Dough Balls – The Story
A little about me, and why I am so obsessed with protein balls, egg-free cookie dough, batter, etc. Growing up, I wasn’t allowed to eat raw cookie dough. I know, I was a deprived child. My mother was worried I’d get salmonella and die, or something like that. My loss is your gain. Also, my husband WAS allowed to eat raw cookie dough, but he has a cast iron stomach, and he can eat anything without getting sick. He is not the biggest fan of my “no licking the bowl” rule, so I have adapted the way I cook and bake to use other products. Because of this, and the fact I’m lactose intolerant, many of my baking recipes are vegan.
What You Need (the recipe is below):
The key to this no bake cookie dough balls recipe is making sure you use the right kind of ingredients. You are going to need medjool dates, pits removed. If you buy the pitted dates (non medjool), this is actually going to be more work, because you have to re-hydrate them for 30 minutes to one hour before you can use them. You might be able to try other dried fruits, such as raisins, prunes, figs. Disclaimer: use at your own risk, but I would love to know if it works out. Add them gradually to the oat and cashew mix (I pulse them first, then blend for best results).
Also, you are going to need plant-based protein powder. I use Plant Fusion pea protein (vanilla bean) and it turned out very tasty. This would make a standard chocolate chip flavored cookie dough. If you want double chocolate chip flavored, use chocolate protein powder. Plant fusion has chocolate, raspberry, vanilla, and cookies n creme flavors. If you want chocolate no bake cookie dough but only have vanilla powder, simply add a bit of dark cocoa powder. You could also add 1 tsp of orange or lemon zest to make a fruity cookie dough, or combine both chocolate and orange, or use coffee grinds (unused) and chocolate to make mocha. Really, it’s a versatile recipe. Be creative!

No Bake Cookie Dough Balls (Egg-Free, Vegan, Gluten Free, Refined Sugar Free)
Easy to make, no bake cookie dough balls (egg free) protein balls that are healthy and delicious! Tastes just like the real thing.
Ingredients
- 1/2 cup oats gluten free
- 1 cup cashews
- 2 Tbsp plant-based protein powder
- 1/4 cup coconut sugar
- 6 pieces medjool dates or rehydrated dates
- 2 Tbsp vanilla almond milk or any other nut milk
- 1/4 cup cacao nibs or dairy free chocolate chips
Instructions

Process oats and cashews in a food processor or blender until they are a flour-like consistency.

Add protein powder, sugar and blend until smooth.

Pulse in dates gradually until well combined.

Add almond milk gradually, until dough like consistency forms.

Fold in chocolate chips.

Wet hands. Roll into balls with hands. Store covered in refrigerator.
