Chocolate Peanut Butter No Bake Cookies

These chocolate peanut butter no bake cookies are a healthy yet delicious twist on an old favorite. Rebooted, this healthy, decadent, gluten free treat is packed with protein and has a secret super food, filled with Omega-3's. They are also vegan, dairy free, and very easy to make. You won't find any processed ingredients, butter, or refined sugar in this recipe!

Ingredients

  • 1/4 cup coconut oil
  • 3 Tbsp flax seed soaked in 1 Tbsp water
  • 1/2 cup non-dairy milk
  • 3 Tbsp dark cocoa powder
  • 1/2 cup liquid sweetener I used agave nectar
  • 2 Tbsp plant-based protein powder
  • 2 cups gluten-free oats
  • 2/3 cup peanut butter or any other nut butter
  • 1 tsp vanilla optional

Instructions

  1. In a heavy bottom pan, melt coconut oil

  2. Add milk, cocoa, and sweetener, and bring to a boil over medium high heat, stirring constantly.

  3. After boiling for 2 minutes, remove from heat

  4. Add peanut butter and vanilla (optional).

  5. Stir until melted. Stir in flax seeds and protein powder.

  6. Fold in oatmeal.

  7. Drop a tablespoon sized dollop into parchment paper and flatten into cookie shape.

  8. Put cookies in freezer for 30 minutes to set. Store covered in refrigerator. Enjoy!
