Ingredients

  • 1/2 cup oats gluten free
  • 1 cup cashews
  • 2 Tbsp plant-based protein powder
  • 1/4 cup coconut sugar
  • 6 pieces medjool dates or rehydrated dates
  • 2 Tbsp vanilla almond milk or any other nut milk
  • 1/4 cup cacao nibs or dairy free chocolate chips

Instructions

  1. Process oats and cashews in a food processor or blender until they are a flour-like consistency.

  2. Add protein powder, sugar and blend until smooth.

  3. Pulse in dates gradually until well combined.

  4. Add almond milk gradually, until dough like consistency forms.

  5. Fold in chocolate chips.

  6. Wet hands. Roll into balls with hands. Store covered in refrigerator.
